I am 25 years old, I have a degree in Business Management and I work for
an Attorney. Those are my credentials. The real me? A 25 year old woman
who has spent 20 years dealing with weight issues. I was diagnosed at
17 with Celiac Sprue. Celiac sprue, also known as celiac disease,
gluten-sensitive enteropathy, and gluten-induced enteropathy, is a
chronic disease of the digestive tract that interferes with the
digestion and absorption of nutrients from food. People with celiac
sprue cannot tolerate gluten, a protein
commonly found in wheat, rye, barley, and to some degree, oats. When
affected individuals ingest foods containing gluten, the lining (mucosa)
of the intestine becomes damaged due to the body's immune reaction.
Because the lining of the intestine contains essential enzymes for
digestion and absorption, its destruction leads to malabsorption, a
difficulty in absorption of food and essential nutrients. As result,
celiac sprue is often considered a
malabsorption disorder. Along with my health issues, I am also a foodie.
A "foodie", a term I will be referencing quite often, is by my own
definition, a person who likes food. HAHA, everyone right? What I
actually mean by liking food doesn't just mean like eating it, it also
means someone who has an interest in food, preparing it, cooking it,
baking it, creating it, taking pictures of it, etc.. So as you can
imagine, dieting has been an ordeal for me. It's not impossible to think
that my weight fluctuates by 10-25 pounds a year, up down and all
around.
However, I finally have discovered, thanks to someone I used to

I am starting this Blog is to have something to look back on after
these 90 days. I am going to review the product, share my favorite
recipes and most likely, bitch a lot! Excuse my language :). I am also
